I would like to be able to choose styles under different categories such as "titles" or even be able to put my favorites into a list by themselves. Also, I would like to be able to put the pictures on the story board line and then apply the wizard to them instead of having to go through the wizard first.

Producer does allow you to create your own categories for your slide styles. Look at Manage Styles. The details are in the ProShow Manual.

I do not use the Wizard, so I have no insight to offer. You can put your pictures on the timeline and choose to randomize motion and transitions. You could try that.
